Made with nothing but Red Tractor Assured British Beef and dried over approx 5 days, The Weston Biltong Company have full tractability on all there Beef. With over 14 flavors to choose from we have something for everyone.
What is Biltong ?
Biltong is a form of dried, cured meat that originated in South Africa. Various types of meat are used to produce it, ranging from beef and game meats to fillets of ostrich from commercial farms. It is typically made from raw fillets of meat cut into strips following the grain of the muscle, or flat pieces sliced across the grain. It is related to beef jerky in that they are both spiced, dried meats, however the typical ingredients, taste and production processes differ; in particular the main difference is that Biltong is typically much less sweet than jerky. Biltong is mainly made using coriander and salt mix and can take upto 7 days to dry.
Biltong is very high in Protein in our last tests we were at 50.3g of Protein per 100g of Biltong.
Firstly the meat is bathed in Vinegar to help cleanse and tenderize the meat.
The meat is then marinaded in our special blend of herbs and spices and left in the fridge for 24 hours.
Once marinaded the meat is hung in a drier which dries the meat through a constant air flow and very low heat (Too high or too quickly would cook the meat; (not quite the outcome we want!) This can take anything from 3 -7 days depending on the thickness of the meat and the fat content levels.
The meat is then sliced and flavored with natural herbs and spices to the taste variations of original Biltong.

We are Ryan, Sheryl, Jake and Charlotte Walker, living in Cheshire but with hearts in South Africa.
Having been born and raised within a fourth generation British farming family and both having attended Agricultural Colleges in the UK, it is of up most importance to us that we only use British Meat in all our products. This combined with our own knowledge and hands on Farming experience ensures we only source the best local produce to support British Farming.
After our first visit to South Africa in 2008 not only did we fall in love with the beautiful landscapes but also the culture and way of life of the South African people.
Biltong and Droewors holds a massive place in the South African culture and is a long held tradition going back to the pioneering South African forefathers.
Its from this new found holiday delicacy and a hobby Biltong drier Birthday present that The Weston Biltong Company was born, initially for our own delight but which has since grown to delight others, especially across Cheshire,Staffordshire and now many parts of the UK.
Having started making only about 3kg a week for personal use and for family and friends we have expanded to drying well over 250Kg a week (Now nearer 400kg and still growing) in a little under a year combined with even more plans for expansion to keep up with demand the future is looking very bright for us.
Biltong is bought to order and made on demand for us. This means its very fresh! This can of course add a delay to your order so we advise buying this separately if you need your order quickly. On average it takes 1 week to be made and delivered directly to us. This might be affected by seasonal events. The Weston Biltong Company are very active and participate in many events and shows around the country which may affect delivery. If you need a definitive date please get in touch.
